Piping-hot Bajan fish cakes

The salty Caribbean breeze kissed my skin as I stepped off the plane, the scent of the ocean mingling with something richer—something fried, golden, and utterly irresistible. My heart pounded with anticipation, not just for the sun-drenched shores of Barbados but for the first bite of a piping-hot Bajan fish cake. Crisp on the outside, fluffy and spiced within, each bite was a love affair—saltfish melting against my tongue, the heat of Scotch bonnet teasing my lips. I closed my eyes, moaning softly as the flavors danced. God, I had missed this.
